I managed to get a look at the spec sheet for the original Digital Eye, and it mentioned being able to grab frames at 640x480 with 8 bits of greyscale. It also mentioned be able to grab up to 15 frames/second of moving video, but it sounded like that would be at a lower resolution. true of the Color Digital Eye -- calling it a "frame grabber" suggests that they're not really planning to support full motion video at all.
